Gordon Ramsay: ‘Chefs should be fined for using out-of-season fruit and veg’
Gordon Ramsay has blasted chefs that use out-of-season fruit and veg — and insists they should be fined for doing so.
The “Hell’s Kitchen” star has even confronted British Prime Minister Gordon Brown about the issue, which he claims is “spiraling out of control”.
He says, “Fruit and veg should be seasonal. Chefs should be fined if they don’t have ingredients in season on the menu.
“I don’t want to see asparagus in December or Kenyan strawberries in March. I want to see it home-grown. It’s a chef’s job to ensure everything is locally sourced and, more importantly, when we haven’t got it, take it off the menu.
“There should be stringent laws to make sure produce is only used in season.
“The quicker we get legislation pushed through, the more unique this country will become in terms of its sourcing and level of inspiration. Understanding these seasonal aspects makes it ten times more exciting for punters.
“I was very fortunate to talk briefly with the PM. We didn’t touch on the subject too much but it’s something I feel really concerned about.”
The fiery TV chef, 41, also warned that unless the catering industry began using less out-of-season produce “the whole thing will spiral out of control”.
